Grilled Plums with Vanilla Ice Cream and Pistachios

Savor stone fruit season with this simple grilled plum dessert! The warm, sweet plums with cool, creamy ice cream makes this an irresistible treat. It’s also pretty to plate! Plums are rich in antioxidants and a good source of fiber. This stone fruit comes in many colorful varieties – red, purple, black, yellow, and pink. Enjoy this seasonal favorite with family and friends!

Recipe: Grilled Plums with Vanilla Ice Cream and Pistachios

Ingredients:

  • Fresh plums, halved and pitted
  • Olive oil or canola oil
  • Old-fashioned vanilla ice cream
  • Pistachios, coarsely chopped
  • Honey for drizzling

Directions:

  1. Heat grill to medium-high heat.
  2. Lightly brush cut side of plum with oil.
  3. Place plum halves, cut side down, on grill directly over the heat. Cook for 2-3 minutes.
  4. Using tongs, turn plums over and cook for another 1-2 minutes.
  5. Transfer plums to dessert plates or shallow bowls.
  6. Top plums with a scoop of vanilla ice cream, sprinkle with chopped pistachios, and drizzle with honey. Serve immediately.

Notes:

  • Peaches, nectarines, and apricots may be swapped for the plums. Slightly adjust cooking time based on stone fruit variety.
  • For this recipe, I used red and purple plums to give a pop of color to the plate.
