Crisp, bright green broccolini is such a pretty side! Packed full of nutrition, broccolini is a great source of fiber, vitamin C, and vitamin A. It is delicious roasted, sautéed, or grilled. Broccolini is also tasty in pasta dishes, stir-fry, risotto, and even salads. Love how easy it is to prepare! All you need is a little olive oil, salt, and freshly cracked pepper. If roasting or grilling, I like to add a couple of charred lemon halves to squeeze over just before serving. Charred lemons give the dish pop of color too.
Recipe: Roasted Broccolini with Charred Lemon
Ingredients:
- 2 bunches fresh broccolini
- 2-3 tablespoons olive oil
- ¼ teaspoon salt
- Freshly cracked pepper
- 1 lemon, halved
Directions:
- Preheat oven to 425°F.
- Wash fresh broccolini and pat dry. Trim any dry, rough ends.
- On a lined baking sheet, arrange broccolini in a single layer.
- Brush each stalk with olive oil. Sprinkle with salt and freshly cracked pepper to taste.
- Roast in oven for 8-10 minutes until crispy and tender.
- While the broccolini is roasting, prepare the charred lemon halves. Slice lemon in half and remove visible seeds. Warm 1 tablespoon of olive oil in skillet over medium-high heat. Add lemon halves and sear for 4-5 minutes. Set lemon halves on serving dish.
- Remove roasted broccolini from oven and arrange on serving dish.
- Squeeze with charred lemon and serve hot.
